CHANA MASALA RECIPE

2 medium onions
8-10 cloves garlic
1T Cumin
1t turmeric
1T coriander
1T salt
Pinch of asofoetida
Pinch amchoor (mango powder)
2 Thai chilies
2 cinnamon sticks
1t cloves
8 cardamom pods
5 medium tomatoes
Bunch of kale
2-3 tins chick peas
Cilantro
Basmati rice

Fry onions in 1/4 cup vegetable oil until they start to brown on medium heat. Mince garlic and add to onions. Fry for another couple minutes. Add spices and fry for another minute. Add tomatoes and cook down (5 minutes or so). Add chick peas along with some of their liquid. Cook on low heat for 30 minutes or so. Add bunch of kale (by bunch I mean a lot, it’ll wilt and cook down quite a lot). Serve with steamed basmati rice and garnish with cilantro.
